Sunday dinner with RA.
We debated whether or not to do the 5-course tasting menu. In the end, we had 8 dishes from the “standard” menu.
Began the night with cocktails. I had japanese scotch ginger, yuzu, honey, peat. She had gin vermouth, carrot, ginger, lemon.
With the stupid ban on foie gras going into effect at the end of the month, we started with foie gras, waffle, smoked maple, hot sauce. Of course.
second course was hamachi, dashi sponge, soy-yuzu, radish, sesame candy
next, we had one of my favorite dishes - brussels sprouts, pigs ears, lardo, apple
then, we got baja scallops, egg yolk gnocchi, mushroom hay. that gnocchi was interesting. biting into it was definitely an experience; didn’t anticipate the egg yolk to ooze out of it.
in honor of a mutual friend, had the beef tartare, hearts of palm, sea bean chimichurri, horseradish, rye
for something more substantial, had the pork belly (two very thick slabs of it), charcoal oil, bbq flavor, corn
the portions were a lot bigger than we were both expecting.
for the final savory dish, got the wagyu beef, carrots, tendon, horseradish tofu
to top off the night, we satisfied our sweet tooth with apple, caramel, burnt wood ice cream
it was a great dinner, and we were both plenty stuffed after polishing off all the dishes. we’re badass.
Ink is definitely one of my top restaurants. Cheers!
